Walking around Central Pattaya Beach, unsure what to eat. The line at Sushiro was endless, and I’d already tried most of the other places. So, I quietly hit the elevator button again and decided to revisit Edge at Hilton Pattaya. After all, they’ve got everything—from oysters to roast beef, sushi to desserts. Just thinking about it made me feel this brunch wouldn’t disappoint.

Edge sits on the 7th floor of Hilton Pattaya. With its high ceilings and full-length windows overlooking the bay, your mood just naturally lifts. Sitting by the window, looking out over Pattaya Bay, every dish seems to taste better under the sunlight. It’s not flashy or Instagram-driven—it’s sincere, comforting, and meant to be truly enjoyed.

First Stop: The Seafood Bar! Oysters, Crab Legs & Giant Prawns Galore
Once seated, the first stop has to be the chilled seafood station. Today’s spread had plump oysters, big sweet prawns, blue crab legs, smoked salmon, mussels, and baby octopus. The oysters were fresh and silky, and the prawns were sweet and bouncy. A bit of lemon or tangy sauce took everything up a notch. Pure seaside vacation vibes!


They also had grilled mantis shrimp, Thai river prawns, steamed crab, and steamed fish. (Honestly, my stomach just wasn’t big enough.)

The carving station was another highlight. The chef sliced Australian ribeye and herb-crusted lamb right in front of you. The beef was perfectly medium, juicy, and tender. There were also beef stew, roasted chicken drumsticks, and smoked sausages, with creamy potatoes, corn, and grilled veggies on the side—perfect for assembling your own luxurious Western feast.
There’s also fresh-baked pizza from the oven. If your stomach has room, you’re in for a treat.



Asian Delights Hold Their Own: Sushi, Roasts, and Dim Sum Done Right
Edge doesn’t skimp on its Asian fare either. The sushi and sashimi selections rotate daily—today’s lineup had salmon, swordfish, and octopus, all neatly sliced and fresh. The Chinese corner offered char siu, roast duck, and Hainanese chicken, complete with fragrant scallion-oil sauce. It really felt like a mini Hong Kong on your plate.

Warm Comfort: Stir-Fried Dishes and Noodle Bar with Thai Soul

If you love warm, hearty food, don’t skip the noodle station. Pick your own broth, meats, and veggies—it’s customizable and satisfying. The hot dish section had fried rice, Pad Thai, stir-fried veggies, and even some Indian curry. A good way to balance out the heavier dishes.





Desserts Like Boutique Pieces: Macarons, Cheesecakes, Chocolate Tarts
Edge’s dessert bar is a real treat (and a struggle if your stomach’s already full). Macarons, mousse cups, berry tarts, and mini cakes all looked like they came from a luxury showcase—elegant, not too sweet, and seriously photogenic. There’s also a cheese section with both soft and hard varieties, paired with dried fruit and crackers. Perfect with coffee—or a glass of bubbly.







Feeling Tipsy? Opt for Free-Flow Sparkling Wine
They offer a free-flow drink package—bubbly, red and white wine, and signature cocktails—for about ฿1300 extra. Ideal for dates or friendly get-togethers, especially when paired with that sea view. Feels straight out of a movie.


Price & Final Thoughts: ฿1,450 May Not Be Cheap, But Worth It
Hilton Pattaya Edge brunch runs at around ฿1,450 per person (excluding drinks). Not exactly cheap by Thai standards, but considering the variety, quality, view, and service—it’s worth coming back for. Whether you’re solo, on a date, with family or friends, this place leaves you full, relaxed, and happy.
